My Perfect Meatloaf

Hey friends!

I am so excited to share my meatloaf recipe with you all this evening! This may sound silly, but I have tried and tried making "my perfect" (and healthy) meatloaf. I ate some meatloaf at a church gathering once and never could figure out who made it. It was the BEST meatloaf ever and I just wasn't satisfied with anyone else's after that. So, after trying different ways each time I fixed it, I finally have a meatloaf that closely matches what I ate at that church gathering. Woot! Woot! Here ya go -

For the loaf
2 lbs organic lean beef
1 egg
1 cup oatmeal
1/4 cup chopped onion
1/4 cup chopped peppers
8 oz (no added sugar) tomato sauce
1 tsp sea salt
1 tsp pepper
1 tsp chili powder
1/2 tsp garlic powder
1/4 tsp smoked paprika
1/4 tsp cilantro

Note: Oatmeal is naturally gluten free, but there can be cross contamination in factories. If you need it to be completely gluten free, make sure it says so on the package!

For the top
1/3 cup ketchup (I use the Simply Nature brand at Aldi to avoid the unnecessary ingredients)
1 tbsp mustard

Preheat oven to 425. Stir up all ingredients that make up the meatloaf. Place in a greased (with olive oil) glass 7x11 or 2 qt dish. Pour topping mixture over top and spread around with a spoon. Bake for about 40-45 minutes.

Comparison is the Thief of Joy

Hey sweet friends!

I am back this week to share an amazing transformation story from one of my coaches and friends, Letitia! Before sharing her story, I have a confession to make. I haven't even told Letitia this, so she will find out with you all! I was first introduced to Letitia at a former job. We talked a little, but it never went past "small talk". Here's my confession. I actually felt really intimidated by Letitia. I used to play the compare game and I just viewed her as superior to me. I honestly can't remember in detail how our conversations flowed before she joined the first challenge group and how she became a coach with me, but I can tell you that I'm so happy she is a part of my team now!! We are so much alike in our thinking and she's someone that I can trust and value as a true friend! I wanted to share this because the compare game is a big thief of your personal joy and will keep you from meeting some pretty amazing people. If you don't already, learn to love yourself and learn to only be in competition with yourself. Your story and background is unique to you. You can't compare yourself to someone else because their story is so different from yours. What they've been through and what they need to improve is going to look different from what you've been through and what you need to improve. Alright, I'm done! Now on to Letitia's story...

Letitia says, "I have battled Fibromyalgia and the pain was at its peak last October and some days I was barely getting out of bed except to take my granddaughter to school and back. My Dr. kept urging me to incorporate clean eating into my diet and to begin an exercise program.......but still that sense of failure was at the back of my mind. Why? I had tried just about every diet available through the years, but the results never stayed. In January of this year, I started cleaning up my eating and tried to incorporate drinking more water. (I used to hate water!) I had also started doing yoga, but honestly it was hard…there was no accountability, but in April I was approached by Tasha about joining an online accountability group. I thought why not? It can't hurt and I NEEDED the accountability it provided. It was one of the best decisions I have ever made. There were guidelines to follow along with recipes, tips, exercises, and tons of motivation from the other ladies in the group! These challenge groups have not only helped transform my body but also my mind. I have always been very shy, but putting myself out there in these groups have helped me overcome some of my shyness. I have also met some wonderful people through these groups that have become great friends. Not only that, I feel wonderful and after drinking Shakeology for 2 months I completely came off all of my Fibromyalgia medication! My body is so much stronger and since joining these challenge groups I have lost 15 lbs (a total of 34 lbs from when I first started my journey). I still have occasional bad days but nothing like it was at the end of last year!"

Be You, Bravely

I've been thinking about what my first blog post should be. It has been rather challenging to think about because usually the first post is an introduction. However, I have already shared who I am and what I stand for on the About Me page.

As already stated, I have made it known that my blog will be about health and fitness. It goes much deeper than that, though. I believe that we have to nurture ourselves from the inside, out. You have to be happy with who you are on the inside first. With that being said, I felt that it was appropriate for my first post to be about being happy with YOU!

Comparing yourself to others leads to a road of destruction and will get you nowhere. God made you as a unique individual and has a purpose for your life. Why would you want to be anyone else?

Will you do me one favor? If you trust me with nothing else, trust me with this. Step out of your comfort zone and bravely be you! Is it easy? Absolutely not! To be honest, it kind of stinks in the beginning! However, if you'll push past your fears, you'll find that the more you strive to be who God intended you to be: the more courageous and confident you will become. I'm not saying that I'm totally comfortable in my skin, but I'm definitely a lot further along than I used to be.

I'm going to leave you with a verse. Don't just read it and move on. Break it apart and really think about it. Let God speak to you.
